
Sweet Sour Fish
What you need
- 3 pcs Deboned, deskinned fish (I use satchi fillets)
- 1 cup flour
- 1 tbs corn starch
- 4 rings pineapples (canned or fresh)
- 1 cup chilli sauce
- 1.5 cup tomato sause
- 2 tbs sugar
- 3 cups water
- 1 red onions
- 3 garlic
- salt
- oil
How to pull it off:
A. Prepare the Fish
- Cut the washed fish into squares (around 4cm). [Please take out a ruler]
- Pour the flour into a bowl large enough to mix.
- Add 1/2 tsp of salt.
- Add the cut fish and mix thoroughly.
- Deep-fry the fish till its slightly yellow.
B. Prepare the gravy
- Cut the onion into large cubes (about 2.5cm). [Again you don't have to take out a ruler]
- Slice the garlic
- Cut the pineapples into cubes
- Heat up 3 tbs of oil in a small sized pot.
- Saute the onions and garlic.
- Add the chilli and tomato sauce and mix them well
- Add water and bring it to boil. Then add sugar. [If you like you can add capsicums, tomatoes or red chilli here]
- Add Corn starch and stir well.
- Add pineapple
- Its done when the gravy has boiled and thicken.
How to put it together
- Use a nice serving plate.
- If you like, you can layer the plate with some lettuce but its not necessary.
- Place enough fish for a serving.
- Using a soup ladle, carefully cover the fish with the gravy and its condiments
This dish is best served with plain rice, although I’ve been to events where it was served with fried rice. Enjoy.
